Mrs GG’s Famous Tomato Relish

This delicious relish goes with so many dishes, we’ve used it with our Gourmet Steak Pie, paired with the super gorgeous Barons & Potter Maverick Merlot 2016.

I N G R E D I E N T S

  • 2 kg tomatoes, chopped
  • 2 large onions, chopped
  • 1 tbsp salt
  • 1 tbsp curry powder
  • 1 tbsp mustard powder
  • 1 tsp chilli flakes
  • 1 cup white vinegar, can use malt if desired
  • 1 cup sugar
  • 2 tbsp corn flour
  • 1-2 tbsp cold water


M E T H O D

Place tomatoes and onions in a glass or plastic bowl. Sprinkle with salt. Leave to stand for a minimum of 4 hours. Strain off and discard liquid.

Place drained tomatoes and onions in large stockpot/preserving pan (at this point I give it a quick blend with a stick whizz to make smoother as Mr GG is fussy and doesn’t like chunky tomatoes & onions).

Add curry powder, mustard powder, chilli flakes (if using) and vinegar. Bring to the boil and boil for about 15 minutes. Stir in sugar until dissolved and continue to boil gently for 1 hour 15 minutes.

Mix corn flour to a paste with cold water. Stir into the boiling sauce until slightly thickened.

Remove from heat, pour into sterilised jars and seal with lids.

Relish will last for months in sealed jars.
