I N G R E D I E N T S
For the Waffles
• 2 cups plain flour
• 1 tsp baking soda
• 1 tsp baking powder
• 2 cups buttermilk
• 3 egg whites
• ¼ cup butter, melted
• 2 tbsp sugar
• 4 eggs, poached to your liking
• 150g steamed spinach or asparagus
• 4 slices cooked bacon, prosciutto or Christmas ham
• Hollandaise sauce, to serve
M E T H O D
This is a deliciously easy way to start your relaxing weekend or festive celebrations.
Preheat the waffle iron.
In a large bowl, combine the flour, baking soda, and baking powder. Add the buttermilk, egg whites, butter, and sugar, stir until just combined.
Pour into the waffle maker and cook for 5-8 minutes until golden brown. Remove the waffles and place in a heated oven to keep warm.
While the waffles are cooking, poach 4 eggs to your liking and if you are using bacon, pop this under the grill at the same time.
To assemble the eggs benedict, layer the steamed spinach on top of the waffles, followed by the bacon and add your poached eggs on top.
Drizzle with hollandaise sauce, serve and enjoy.
